Yes, You Can Eat Red Meat (Just Not Every Day)

My patients are always saying that they can’t eat healthy because they like to eat red meat. Well, I like eating a good steak as much as the next person and I do. I don’t eat red meat that often - probably about 5 times a month or so. I do eat leaner cuts and Dr. Gourmet recipes reflect these healthier choices.

Most people are concerned about red meat because of the fat and cholesterol and how it can affect their heart. This is important and eating leaner cuts with less saturated fat is key for a healthier cardiovascular system. There’s a role that red meat plays in cancer as well but we haven’t known all that well to what extent until now.

Researchers from the American Cancer Society, Emory University, and the National Cancer Institute recently published a report on the relationship between eating meat and the risk of colon or rectal cancer (JAMA. 2005;293:172-182). While this might not be news to you if you’ve seen other, red-meat-related health reports in the media, the important thing about this study is that it evaluates long-term meat consumption at various levels of consumption as well as focusing on the specific risk of rectal cancer, not just colon cancers and rectal cancers.

This study looked at 69,664 men and 78,946 women between the ages of 50 and 74 who were initially a part of another, larger study on cancer mortality that began in 1982. At that time they filled out a questionnaire with information on diet, exercise, medical history, and other lifestyle habits. In 1992 and 1993 another questionnaire was administered, requesting similar information, and then followed up in 1997 and every two years after until 2003.

In the questionnaires, respondents were asked to report on their eating habits for the previous year, estimating how often, on average, they ate a particular food or beverage per week as well as serving size (small, medium, or large). The researchers defined meats in three basic categories, as follows below. Note that Processed Meat is really a sub-category of Red Meat!

Researchers analyzed each volunteer’s intake of the three defined types of meats in various ways, including computing a ratio of red meat to poultry/fish in each person’s diet. They also identified five levels of red meat consumption, processed meat consumption, and fish/poultry consumption, then compared those levels of consumption with the number of actual cases of colon or rectal cancer found in the survey respondents.

After controlling for various lifestyle factors, including caloric intake, exercise levels, smoking, and the amount of fruits and vegetables consumed, researchers found that those men and women with a long-term high intake of red meat had an increased risk of rectal cancer of 43%.

Those men and women with a long-term high intake of processed meats, however, had only a 20% increase in the risk of rectal cancer, but their risk of other types of colon cancer rose by as much as 50%.

Finally, those who consistently ate the most poultry and fish had a reduced risk of rectal cancer (decreased by 19%), while the risk of other colon cancers were reduced by 23% to 30%.

It’s pretty clear from this study that eating a lot of red and processed meats for the long term isn’t going to do much for your health. That doesn’t mean you can’t eat red meat at all. As the researchers found that those who ate about equal amounts of red meat / processed meats and poultry or fish had no increase in their risk of colon or rectal cancers. That’s good news for those of us who like an occasional steak or good beef stew.

Liquid Egg Protein-Is it an Effective Subsitute for Whey

Whey Protein has long out sold powdered egg protein primarily on the basis of taste. Now a liquid egg protein is available but is it worth it?

While at the 2006 Arnold Classic Expo, one booth caught my eye, Egg Whites International. I am no fan of egg white protein because of the awful taste, but they had a sample chocolate protein drink and I thought I’d give it a second try. I was ready pucker my face as I normally do with egg protein, however no such pucker came. Actually, the taste was pleasant and I became interested in hearing more about this protein.

Egg white protein normally comes in powder form which tastes pretty lousy. Eggs Whites Int protein is in liquid form was tasteless at least in that chocolate drink.

The Eggs Whites International are not raw egg whites separated and sold but rather they are pasteurized and processed to insure disease free consumption. The liquid is no longer clear but yellow. Actually it looks like urine which at first sight is disgusting. As I heard the guy talk about this product, he recommended that you mix in a shake flavored with fruit, yogurt and, yes he mentioned, whey protein.

His claim on Egg White protein is that it is 100% bioavailable. By this, the body in theory can utilize every single gram of this protein. According to them, whey protein is only 70-80% bioavailable. With this information the salesmen takes a leap of faith as far as I’m concerned and states that whey protein can only support muscle growth for 2-3 hours while Egg Whites last 4-5 hours. It’s unclear to me if he means egg whites digest more slowly and time released or that more protein will last longer. If latter is the case, then simply add more whey protein to diet should match the egg protein duration.

Nonetheless I had to give this product a try, so I order 2 gallons. Getting this product is going to be a bit different than whey protein. Don’t expect your local health food store to distribute since, it has to be refrigerated. And I don’t expect to see it in frozen food section at grocer anytime soon either. I received my two gallons mostly still frozen in insulated lined container. I popped one in the frig and the other in the freezer.

As of this writing, I have tried this protein three times. I mixed it chocolate whey the first time and was really good. The last two times I mixed with strawberry whey and fresh strawberries. All in all, compared to a non egg white protein shake, these seemed a bit richer. I guess that should be expected.

And now that digital cameras are becoming more and more common, it seems that we will have to learn all over again how to take a photograph, this time with a digital camera.

Do not worry - realize that this time, you have technology on your side. You may not end up with photographs worthy of “National Geographic” status, but you will be able to get some that will look beautiful on your wall and in your photo album.

Here are some tips for taking better photographs with digital cameras:

Get to know your camera. It may seem tedious, but be sure to read through your owner’s manual. Spending just an hour or two acquainting yourself with your camera will save you a lot of stress down the line.

When you first get your digital camera, practice taking photos. Make sure that you know how to use it before you take it on your vacation or to your daughter’s graduation! You do not want to miss great photo opportunities because you are too busy trying to turn your camera on!

Do not be shy - take as many photographs as want. Most digital cameras come with memory cards that hold a multitude of photographs - if yours does not, get an extra memory card. If you take a hundred photographs of one thing, at least one of them will turn out!

Use the features on your camera! Most digital cameras have different modes for different types of photographs - night mode, landscape, portrait, macro, etc. Understand these modes, and know when to use each one.

Use the LCD screen - if your digital camera has a good LCD screen, you will be able to tell almost immediately whether or not you took a good photo - if your daughter’s eyes were closed, be sure to take another one!

Remember: close-ups are often more interesting than shots from a distance. You do not have to have everyone’s feet in every photo! Consider taking a photo that includes everyone from just the shoulders up. Also, if you are taking a photo of your family at the Epcot Center, for instance, realize that you do not have to fit the entire Epcot globe into your photo. If you do that, your family will look like ants in the photo and there is no reason for them to have stood in the frame in the first place. Instead, get a close-up of your family with just a small aspect of the globe in the background. Or get a photo of your family by the sign, instead. You can always use the landscape feature of your digital camera to take a photo of the entire globe, later.

The subject of your photograph does not always have to be the center of your photograph! Try taking photographs with your subject slightly to the side of the frame, for instance.

Be aware of lighting. Without learning too much about how lighting affects a photograph, you can still be aware of certain aspects. For instance, if the sun is setting behind your subject, your subject may turn out as a silhouette. Of course, if you try take a photo of your friend with the sunlight hitting him from the front, be aware that he will probably have to squint his eyes.

If it is extremely bright out (like if you are in bright sunlight or in the snow), hold up something of a neutral color (like a dark tan bag or light gray sweatshirt) to the camera as you focus (most digital cameras focus when you push the button halfway down), then remove it before you take the photograph of your actual subject.

Try new things. Do not be afraid to get down on the ground to take a photo of an object or a person from a different angle. You do not have to take all of your photos head-on. Take a photo of a sign from an angle, take a photo of the Eiffel Tower from the bottoms looking up, etc.

If you are on vacation, do not get stuck taking photos of your fellow travelers standing in front of one famous, forgettable building after another. Yes, you can still take these photographs, but consider taking a photograph of your friend in front of the sign, too, so that you at least know which building it is! Also, be sure to take photographs of not just places, but of memories. For instance, be sure to get a picture of your friend’s feet as she stumbles around with a broken high heel. Take a photo of the menu from your favorite restaurant. Take photos of not just the beautiful fronts of buildings, but the graffiti-ed, trashy alleys, too. Take photographs of things that you will not see on the postcards, of things that are unique to your own personal experience!

You do not need to set up every single shot. Take photos of people when they are unaware that you even have your camera out. Go ahead and take some photos of strangers, as well.

One of the benefits of taking digital photographs is the fact that you can touch them up on your computer at home. Be sure to make use of this great feature. You do not need to spend your time touching up all of your photos, but definitely go through and fix up your favorites - you can straighten them, remove red eyes, brighten or darken them, and do many other things, as well.
